Why?

Snowplowing or sliding around a turn slows you down to get around the corner, but with a step turn you accelerate! Keeping your hands in front helps you steer and stay forward on your skis, so you stay in control more easily.

 

How?

In a step turn, the skier pushes off with their outside ski around a turn, similar to a skating pushoff. The more steps you make around the corner, the faster you go, so light quick steps are better.
